Timo Mayer is a small winery that produces its own wine from a single vineyard.
"We believe that a wine is created in the vineyard and therefore try to intervene as little as possible in the natural winemaking process."
During production, the wines are not matured or filtered for long periods, allowing the terroir to come into its own. The aim is to produce wines that stand out in terms of character. To this day, Timo's winemaking philosophy is "Bring back the funk!". - He continues to push boundaries and experiment with his wines, as in recent years when he began working with Nebbiolo and Gamay, which are atypical of the Yarra Valley. His wines are known for their elegance, purity and complexity, especially when compared to other wines from the region.

At Timo Mayer there is neither the usual acidification nor vacuum evaporation or dealcoholization, which is why his Shiraz tastes like Syrah, naturally compatible in alcohol, aged in real wooden barrels without simple wood make-up, matured for a long time on the yeast, spontaneously fermented like all Mayer wines and bottled as unmanipulated as possible. A typical Australian Shiraz of a new generation, which proves that it also works differently in Australia, namely delicate and rather devoted to finesse than raw power, gentle in the tannins but fresh and spicy on the tongue and overall so independently cool and easy to drink that joy arises.
