WINERY NIKOLAIHOF WACHAU
With almost 2,000 years of history, the Nikolaihof is the oldest winery in Austria. On 22 hectares, mainly Riesling and Grüner Veltliner are cultivated according to strict biodynamic Demeter guidelines. No herbicides, pesticides, artificial fertilizers or synthetic sprays are used in the vineyards. The wines ferment on their own yeast and are stored in the historic Roman wine cellar in large, old oak barrels for up to 20 years. For almost 50 years, the Nikolaihof Wachau, as one of the first wineries in the world, has been farmed biodynamically and today stands for internationally excellent, storable white wines. In 2005, Nikolaus Saahs took over the family winery from his parents and farms out of deepest conviction according to the strict organic criteria of Demeter.
