Pappa al Pomodoro - Ingredients: 500 g ripe tomatoes; 300 g stale white bread; 2 cloves of garlic; fresh basil; olive oil; salt; pepper

 

Preparation:
Scald the tomatoes, peel, deseed and roughly chop.Cut the stale white bread into small pieces .Heat the olive oil in a pan and sauté the garlic cloves. Add the chopped tomatoes and simmer gently. Add the white bread and mix well. Season with salt and pepper and simmer over a low heat until the bread is soft and has a creamy consistency. Before serving, sprinkle with fresh basil and finish with a drizzle of olive oil.
